Ingredients

  • Fancy’s Custard Powder: 30g
  • Full cream milk powder: 30g
  • Unsweetened fresh milk: 280g
  • Egg yolks: 2
  • Sugar: 60g

Instruction

  • Mix about 50g of fresh milk with the full cream milk powder and Fancy’s Custard Powder, stirring until fully dissolved. Then, add the egg yolks and whisk until smooth (1).
  • In a separate pot, heat the sugar and the remaining fresh milk to about 70°C. Remove from heat (2).
  • Combine mixture (1) with about 50g of mixture (2), whisking well, then strain the mixture through a sieve to ensure smoothness. Add the remaining portion of mixture (2) and stir thoroughly. Continue cooking over medium heat until the mixture thickens, stirring constantly to prevent burning.
  • Once the mixture boils and thickens, remove from heat.

Used as a filling for various pastries, sweet breads, and more.
