Dry yeast, wheat flour (66.9%), wheat starch, potato starch, milk powder, soy protein, sugar, salt.

Ingredient

  • Mama’s Choice Dumpling Flour: 500g
  • Cooking oil: 15ml
  • Water (or fresh milk): 190ml
  • Sweet dry yeast: 6.5g

Instruction

  • Dissolve the yeast and a little sugar in about 15ml of warm water (37°C), stir well. Wait for 5-10 minutes until the yeast rises and forms a frothy layer, indicating it’s ready.
  • Sift the dumpling flour to get a finer flour mixture.
  • Reserve about 1 tablespoon of dumpling flour (~15g) to use as a dusting flour for kneading. Add the flour and activated yeast into a bowl, then pour in the water/fresh milk and cooking oil.
  • Knead the dough by hand or with a machine for about 20-25 minutes until the dough is smooth and elastic.
  • Cover the dough with plastic wrap and let it rest for 30-45 minutes until it doubles in size.
  • Lightly knead the dough again and roll it out several times. Divide the dough into small portions of 50-100g (as desired). Use a rolling pin to flatten each portion into a round shape. Place the filling in the center and shape the buns.
  • Let the buns rise for another 10 minutes.
  • Steam the buns for 15-20 minutes, and they are ready to serve.
