Cheese powder (10%), wheat flour, starch (cornstarch), milk powder, sugar, salt, emulsifiers (E322, E471), stabilizer (E415).

Ingredient

Mixture A

  • Fancy’s Cheesecake Premix: 1000g
  • Unsweetened Milk: 1220g
  • Whipping Cream: 252g
  • Butter: 396g

Mixture B

  • Sugar: 760g
  • Tartar powder: 17g
  • Egg white: 816g

Mixture C

  • Egg white: 990g
  • Salt: 18g

Instruction

  • Lay oven paper into the tray. Place a baking tray with water in the oven to create a water bath. Preheat the oven to 150°C for upper side and 135°C for lower side.
  • Separate the eggs, placing the egg whites into one mixing bowl and the yolks into another.
  • Melt the cream cheese and gradually add Mixture A, Whisk with a balloon whisk until the cream cheese is smooth and fully dissolved. Turn off the heat and let it cool.
  • Add Fancy’s Cheesecake Premix into the cooled cream cheese mixture, and whisk until smooth. Then, add the egg yolks and mix until combined.
  • Whip the egg whites until frothy, then add tartar powder and sugar. Continue beating at medium speed until soft peaks form.
  • Fold a small portion of the whipped egg whites into the batter using a whisk. Once incorporated, gently fold in the remaining egg whites until the batter is well mixed.
  • Pour the batter into the prepared tray.
  • Bake in the water bath for 55 minutes (adjusting as needed based on your oven).

Used to Cheesecake.
