When baked, these layers separate, resulting in a certain crispness and flakiness known as puff pastry. Notably, the puff pastry sheets do not contain any leavening agents, making them suitable for various types of pastries such as: Pate Chaud, mille-feuille, egg tarts, galette des rois, etc.
